Banana Chocolate Chip Muffins

Makes 12 muffins

Ingredients

1 cup spelt flour

1/3 cup almond flour

1/3 cup collagen peptides

1 tsp ground cinnamon

1 tsp baking soda

½ tsp coarse ground sea salt

1 stick unsalted butter, at room temperature

¼ cup coconut sugar

2 eggs

1 ½ cups mashed banana (3-4 very ripe bananas)

1 tsp vanilla extract

2/4 cup chopped walnuts

¼ cup dark chocolate chips

Directions

1. Preheat oven to 350. Line a muffin tin with 12 paper liners.

2. In a large mixing bowl, combine the spelt flour, almond flour, collagen peptides,  cinnamon, baking soda, and salt.

3. In a separate mixing bowl, use a handheld mixer or stand mixer to beat together the butter and sugar on low just until combined.  Add the eggs and continue to beat for 1 minute.  Add the bananas and vanilla and beat just until combined.

4. Pour the wet ingredients over the dry ingredients and stir just until combined. Fold in the walnuts .

5. Scoop the batter into the muffin cups until nearly full. Bake in the center of the oven until the top is golden brown and a knife inserted in the center comes out clean, 20-25 minutes.

6. Cool completely before storing
