Edamame Dumplings

Makes 15 - 20 wontons

 

INGREDIENTS

1 cup shelled edamame

1 cup basil (packed down)

1/2 cup scallions, chopped

2 garlic cloves (can omit if garlic allergy)

1 tbsp mayo (I use this one or this one, just depending what is on sale)

2 tsp rice wine vinegar

2 tbsp toasted sesame oil

2 tsp rice seasoning ( I use this one)

1/2 tsp salt

1/2 tsp maple syrup (can omit)

Small wonton wrappers

DIRECTIONS

  1. Preheat oven to 375 degrees.

  2. Add all ingredients (except wonton wrappers) to a food processor, blend until fully combined).

  3. Lay out wonton wrappers. Add 1-2 tsp filling to the middle of the wonton.

  4. Put water along the edges of the wonton wrapper, seal closed. At this point they will look like triangles. Fold in the edges of the wrappers, so the ends don’t burn (dap the ends with water before folding inward so they will stay put). Repeat until all filling is used up.

  5. On a large baking sheet spray with coconut oil. Lay out dumplings. Spray dumplings with coconut oil, sprinkle with some additional rice seasoning.

  6. Bake for 10 minutes.

  7. Serve hot!
