Edamame Ramen Noodle Bowl

Tonight I was craving comfort food, but I wanted it to also be healthy. Even though its 95 degrees outside I settled on making my own version of ramen. I used what I had on hand, but feel free to substitute salmon for steelhead (or even chicken, shrimp, tofu) and add in different vegetables (carrots, box choy, onions). The sky is the limit with this soup, but this is the basic template.

 

INGREDIENTS

1 4oz filet of steelhead (a type of rainbow trout)

2 cans full fat coconut milk

1 cup vegetable broth (can substitute chicken or beef)

1 cup raw broccoli heads

1/2 pkg edamame noodles

2 tbsp fish sauce

1 tbsp + 1 tsp rice seasoning

1 tbsp coconut aminos

1 tsp sesame oil

1 tsp black sesame seeds

1 hard boiled egg (directions below)

2 mint leaves (for garnish)

1 tbsp red pepper flakes *optional

STEELHEAD DIRECTIONS

-Heat oven to broil - let it get hot

-place steelhead on a lined baking sheet sprayed with oil. Spray steelhead with coconut or avocado oil (avoid olive oil) and top with 1 tsp rice seasoning and a little salt and pepper.

-place in the broiler for 7-10 minutes depending on thickness, it should be a little pink on the inside when its done.

-remove from the oven and let sit when done.

HARDBOILED EGG DIRECTIONS

-add 1 egg to a small pot and fill with water (until it covers the egg)

-place on the stove over high heat

-set the timer for 14 minutes

-once done immediately place into an ice bath (a bowl of water with ice in it).

-Let cool completely. Peel and slice in half

SOUP DIRECTIONS

- in a medium sized pot bring water to a boil. Add in the edamame noodles and cook according to package directions.

- After the pasta has finished cooking, pour into a colander and rinse.

- Using the same pot (once emptied) over medium heat pour both cans of coconut milk, the veggie broth, and add in the broccoli heads. Cover with a lid and let sit about 10 minutes (until broccoli can be pierced with a fork).

-Then add in the fish sauce, sesame oil, 1 tbsp rice seasoning, and coconut aminos (I wanted a little heat at this point so I added about 1 tbsp red pepper flakes, feel free to add more or less or omit altogether).

-Add in the cooked edamame noodles and stir to combine. Let sit uncovered for about 5-7 minutes until everything is heated through.

-Immediately serve and top with the steelhead, the hardboiled egg (or the entire thing if you are hungry) that is cut in half, the sesame seeds, and the mint.
