Breakfast Pizza

Makes 1 pizza

Ingredients:

1 Tortilla - I use either Trader Joes Olive Oil tortillas or Ezekiel Sprouted Tortillas

2 Cage Free Eggs

2 slices Bacon/Turkey Bacon

1 cup spinach or arugula

1/2 cup shredded Swiss cheese (can substitute whatever cheese you like best)

Dijon Mustard

Avocado Spray

Optional: sliced cooked sweet potato, raw green bell peppers, sunflower seeds, sliced almonds

Directions:

  • Heat oven to 375. Spray tortilla with spray. Bake for 10 minutes.

  • While in the oven cook the bacon and the egg. I currently prefer mine over easy, but a fried/poached/scrambled egg would also work.

  • When the tortilla is crispy remove from the oven, spread with dijon mustard, layer on the spinach and/or arugula, the bacon, if using sweet potatoes or green bell pepper add now, top with the cheese. Put back in the oven for an additional 3-5 minutes.

  • Remove and top with the eggs, salt and pepper to taste. Sprinkle with seeds or nuts.

  • Serve hot!
