Mung Bean Burgers
Ingredients
1 cup uncooked mung beans
1 cup panko breadcrumbs
½ cup almond meal
3 tbsp Sriracha bbq sauce
1 tbsp chili powder
1 tsp paprika
½ tsp coarse sea salt
½ tsp ground pepper
Directions
1.Add 1 cup uncooked mung beans to 3 cups water. Bring to a boil.
2. Lower to medium heat and cook for 20-25 minutes. Add more water if mung beans are no longer covered. You want the mung beans to be the same consistency as a smashed sweet potato.
3. Preheat oven to 400 degrees.
4. Add remaining ingredients into a bowl.
5. Once mung beans are cooked, add to the remaining ingredients.
6. Line a baking sheet with parchment paper, spray with avocado oil.
7. Form ingredients into 6 patties and place on parchment paper.
8. Spray with avocado oil.
9. Bake for 10 minutes.
10. Flip over and cook an additional 10 minutes.
Serve immediately.
