Salad Nachos

Makes 4-6 servings

INGREDIENTS

1-2 bags grain free chips (enough to cover 1 regular size cookie sheet)

1 red bell pepper, sliced

2 carrots, peeled

8 scallions, chopped

2 jalapeƱos sliced (can omit)

4 cups spinach, chopped

1 cup shredded cheese

1/2 cup chopped cilantro

2 avocados, diced

2 limes

DIRECTIONS

  1. Preheat oven to 400 degrees.

  2. Spread chips over a cookie sheet.

  3. Top with chopped spinach, scallions, and red bell pepper.

  4. After the outer layer of carrot skin has been removed, use the vegetable peeler to continue peeling strips off the carrot. Add to the nachos.

  5. Top with cheese and jalapeƱos.

  6. Bake for 10 minutes.

  7. Top with cilantro, avocados, lime juice, salt and pepper.

  8. Optional: use plain greek yogurt as sour cream

  9. Enjoy!
