Green Bean "Fries"
Makes 2-4 servings
As a kid growing up in Oklahoma I loved going to TGI Fridays. I either ordered mozzarella cheese sticks or green bean fries. I chose to make mine a bit healthier than theirs with the addition of flax meal - high in fiber and a source of magnesium. I also used a healthier chip made from beans for the “breadcrumbs”. Serve with your fav dipping sauce or eat on their own.
INGREDIENTS
16 oz package trimmed and cleaned green beans (I got mine from Trader joes)
1 5 oz bag Beanitos hint of lime chips
4 tbsp flax meal
1/4 tsp salt
1 tsp pepper
1 tsp cayenne pepper
2 eggs
DIRECTIONS
Preheat the oven to 425 degrees.
In a shallow mixing dish mix the two eggs with 2 tbsp water. Mix well. Season with salt and pepper.
In a food processor or blender, pulse the chips until they resemble fine bread crumbs. In a different shallow mixing dish mix the chips with the flax meal, salt, pepper, and cayenne.
Working in batches dredge the green beans in the egg wash and then the “bread crumb” mixture. Place on a large baking sheet (that has been sprayed with some coconut or avocado oil). Repeat until all green beans are coated.
Cook for 15 minutes, flip over and cook an additional 10 minutes.
Option to serve with primal kitchen ranch or ketchup!
