Amaranth & Sweet Corn Fritters

Makes 10-12 fritters

 

INGREDIENTS

1 cup uncooked amaranth

2 cups fresh sweet corn (cut off the cob, can use frozen just make sure it’s thawed)

2 eggs

1/4 cup milk

2 tbsp green onion, chopped

2 tbsp hemp seeds

1 tsp salt

1 tsp cayenne

3/4 cup oat flour*

2 tsp baking powder

4 tbsp avocado oil

DIRECTIONS

  1. Cook amaranth - heat a medium sized pot over medium heat. Pour in 1 cup of amaranth. Toast for 1-2 minutes. Then add 1 cup of water. Cover and bring to a boil. Once boiling, drop temperature down to medium low heat for 15 minutes. Remove from heat but keep covered for an additional 10-15 minutes. End result should be fluffy, similar to cooked quinoa in appearance.

  2. In a large bowl beat the eggs, mix in the corn, milk, chopped green onion. hemp seeds, salt, cayenne. Mix thoroughly.

  3. In a small mixing bowl combine the oat flour and baking powder.

  4. Mix the amaranth into the egg and corn mixture. Slowly mix in flour.

  5. Mixture should be thick and very dense.

  6. Heat 1 tbsp of avocado oil over medium heat. Drop in fritter mixture 1/4 cup at a time. Roughly 4 fritters should fit in a pan at a time.

  7. Cook on each side 2-3 minutes.

  8. Serve warm. I topped with some avocado and greek yogurt.

*Can use any flour you prefer (I would not recommend using coconut flour, unless making additional modifications to wet ingredients)
