Linguine a la Vodka
INGREDIENTS
2 tbs butter
2-4 garlic cloves, finely chopped (I love garlic so I had 4, but can cut down or omit)
1 yellow onion, finely chopped
1/2 cup finely chopped celery (about 2-3 stalks)
1 pound lean ground beef (or bison)
1 28 oz can fire-roasted tomatoes
1/2 cup vodka
1 tsp - 1 tbsp red chili flakes (decide based on how much you like spice)
1/2 cup heavy cream (or whole milk, but do not use alternative milk, omit if that is the case and replace with 1/4 cup pasta water)
1 tbsp dried thyme (or oregano or basil)
Salt and pepper
Parmesan - optional
DIRECTIONS
Heat a large skillet over medium heat. Add in garlic and onion, sauté for 4-5 minutes. Add celery. Cook another 2 minutes. Season with salt and pepper. Add in ground beef. Season again with salt and pepper. Cook until ground beef is nearly cooked through.
Add in crushed tomatoes, vodka, red pepper flakes, dried thyme and bring the temperature to medium-high. Reduce to medium-low until the sauce is reduced by half, about 30 minutes. During this time cook pasta according to package directions.
