All the Greens Salad
INGREDIENTS
4 Cups (think big handfuls) lettuce of your choice - I used mix greens
2 shallots, diced
4 oz blue cheese, crumbled
1/2 granny smith apple, thinly sliced
1/4 cup pine nuts or nut of choice, optional
1/4 cup hemp seeds, optional
Dressing
2 tbsp tahini
1 tbsp lemon juice
1/2 tsp salt
1/2 tsp pepper
1/4 ish cup olive oil (I drizzle in after combining the top 4 ingredients and stop when consistency is to my liking)
Taste dressing, add more salt and pepper as needed. Toss with salad greens, top with shallots, blue cheese, granny smith apple, hemp seeds and pine nuts. Eat up!
