30 min "Two Hour Wow" Pasta Meal (Vegetarian!)
INGREDIENTS
2 garlic cloves, chopped
2 shallots, chopped
1/2 yellow onion (can also use white), chopped
2 tbsp butter
1 package beyond meatballs (can use any other meat free meatball, or even an actual meatball)
28 oz can crushed tomatoes (I prefer San Marzano)
1 tsp red pepper flakes
1 tbsp fresh thyme
1 tbsp fresh rosemary, chopped
3 cups spinach (about 2 large handfuls, add more or less :)
1 box chickpea pasta (I used Ancient Harvest Fusilli, can also use Banza, or any pasta you want!)
1 cup fresh mozzarella (I love buffalo mozzarella, but any fresh will do. Preferably not pre-sliced or shredded, but use what you can find/have)
DIRECTIONS
Cook pasta according to package directions and then drain.
While pasta is cooking, place a large skillet over med heat. Saute garlic, shallots, and onions in butter. Ssaute 2-3 minutes. Toss in meatballs. Cook 5 minutes. Add in crushed tomatoes. Season with salt, red pepper flakes, thyme, and rosemary. Simmer 10-15 minutes. Toss in spinach and cook down.
Toss in cooked pasta. Top with fresh mozzarella. Broil 3-5 minutes.
Serve and enjoy!
